"Tini" Panini
1 French Baggett (narrow with firm crust)
8 oz. Fresh Mozzarella Cheese
1 c. Fresh Basil (roughly chopped)
1 c. Sundried tomatoes packed in oil olive (sliced in half)
2/3 c. Extra Virgin Olive oil
Preheat a grill, sandwich press, or a stovetop grill pan to medium heat. Slice the Baggett into ½"-1" slices. Place one
slice of mozzarella on a slice of bread and then layer one pinch of basil on top. Top the basil with a slice of the sundried
tomatoes and place a second slice of bread on top. Repeat until all the small sandwiches are assembled. Brush both sides of
the sandwiches with olive oil. Place the sandwiches, a few at a time, on the grill and grill for 1-2 minutes (per side on
grill pan) or until golden brown and cheese has melted. Arrange on platter and serve.
